Desserts from the Europeans


We are going to look at one signiture dessert from several European countries.

Eva is going to provide a brief recipe of each, just in case you'd like to try making it on your own.

Trdelník

Did you know

Trdelník is a kind of spit cake. It is made from rolled dough that is wrapped around a stick, then grilled and topped with sugar and walnut mix. It is found in several Central European countries, most prominently Austria, Czech Republic, Slovakia and Hungary. A modern version filled with ice cream or other fillings, has been spreading recently from Prague

Recipe

Here is how you would make a Trdelník on your own:

  1. Stiff into large mixing bowl flour and powdered sugar.
  2. Make a small hole in the middle and place into it crumbled fresh yeast. Pour lukewarm milk over the yeast.
  3. Add egg yolks into the bowl, pour in melted butter, add pinch of salt.
  4. Wrap the dough tighty around the BUTTERED "trdlo" wooden stick.
  5. Glair with the last egg, cover all around with chopped walnuts and granulated sugar.
  6. Bake as described above over hot coals on the grill.

Bűndnernusstorte

Did you know

The bűndnernusstorte is a yummy caramelised nut-filled pastry originating from the canton of Graubűnden. It's made in small independent bakeries all over the canton, each of which have their own variation on the basic recipe of short-crust pastry with a filling of caramelised sugar, cream and chopped nuts, usually walnuts.

Recipe

Here is how you would make a Bűndnernusstorte on your own:

  1. You have to roast the sugar until it's light brown.
  2. After the sugar is light brown, you add the walnuts and almonds
  3. You add the cream and you boil up the mass
  4. When the mass doesn't drops too fast, you cool down the mass.
  5. Put the filling on the bottom of the shortpastry.
  6. Put on the top of the pastry.
  7. Bake the Nusstorte during 15 min at 200C = 392F
